Cabbage Roll Soup with Beef

Everyone reaches for chicken soup during the cold winter season. But I’m here to argue that a soup loaded with protein and veggies is the way to go. Keep that chicken soup in your rotation and add this Cabbage Soup Recipe right along with it.

If you aren’t into ground beef you can make this with chicken, turkey or ham. This soup can also be easily made vegan by using vegetable broth and omitting the beef altogether.

Is Cabbage Okay On Keto

Yes, cabbage is high in fiber and low in carbs. This soup is Keto-friendly and low carb. If following a strict Keto diet the carbs can be reduced by omitting the carrot and decreasing the amount of tomatoes.

Is Cabbage Soup Good For Weight Loss

I would say yes it is. This soup in particular is high in fiber, protein and loaded with healthy vegetables.

While I’m not a fan of diets that would have me eating nothing but cabbage soup, this soup is a great addition to a healthy diet. It is also great for colds. I had a cold a few weeks back and this soup is what got me through it.

Ingredients Needed For Cabbage + Beef Soup(screenshot for grocery list)

  • Ground Beef
  • Yellow Onion
  • Celery
  • Carrot
  • Green Bell Pepper
  • Garlic
  • Spicy Brown Mustard
  • Dried Italian Seasoning
  • Smoked Paprika
  • Beef Broth
  • Fire Roasted Crushed Tomatoes
  • Fresh Thyme
  • Salt/Pepper
  • Green Cabbage

How Do You Make Cabbage Soup

  1. In large soup pot, brown ground beef. Set aside and drain any excess grease from pot (leaving approx 2-3 Tb).
  2. Over medium/high heat, sauté onion, celery, carrot and green pepper in grease. Add more oil if needed.
  3. Once vegetables are tender add garlic and sauté 1 minute.
  4. Return ground beef to to pot and add brown mustard, Italian season and smoked paprika. Stir.
  5. Add beef broth, crushed tomatoes and thyme. Bring to a boil, reduce heat and simmer 15-20 minutes.
  6. Add cabbage and simmer until cabbage is tender (10-15 minutes). Salt and pepper to taste.
  7. Serve as is or over rice.

Ingredients

  • 1 Lb Ground Beef
  • 1 Yellow Onion - chopped
  • 2 Celery Ribs - chopped
  • 1 Carrot - chopped
  • 1 Green Bell Pepper - seeded, chopped
  • 3 Garlic Cloves - minced or grated
  • 1 Tablespoon Spicy Brown Mustard
  • 1 Tablespoon Dried Italian Seasoning
  • 1 teaspoon Smoked Paprika
  • 32 ounces Beef Broth
  • 28 ounces Fire Roasted Crushed Tomatoes
  • 2 Sprigs Fresh Thyme
  • Salt/Pepper - to taste
  • 1 Green Cabbage - core removed, chopped

Instructions

    1. In large soup pot, brown ground beef. Set aside and drain any excess grease from pot (leaving approx 2-3 Tb).

    3. Once vegetables are tender add garlic and sauté 1 minute.

Notes

    I made this tonight and it is wonderful. I followed the directions but had to add 2 cups of water. This was about 7 to 8 quarts of soup. Is this correct for a total of 8 servings?
