It is officially the holidays around here! This one is especially exciting since we are finally living next to family again. This means it will be more than just a Christmas for two! When it comes to travel-friendly recipes…there’s nothing quite like cookies. They’re fun, a huge variety, & I can actually get them from point A to B completely intact! Today I’m sharing a twist on the oh-so-beloved sugar cookie- some Rainbow Stained Glass Cookies!
There are tons of ways to make these cookies but I’ll be showing you two ways- one way to make shapes & one to make traditional cookies. Either way you’ll end up with shapes & swirls that are color blocked like above! Here’s the recipe for basic sugar cookies below!

Basic Sugar Cookies

Just the most basic recipe- memorize it for perfect cookies each year!

Serves: 32 cookies

Ingredients

  • 2 cups all-purpose flour + extra for rolling
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk together flour, baking powder, & salt. Set aside.
  2. In an electric mixer cream your butter & sugar. You want it nice & fluffy!
  3. Turn the mixer to low & slowly add in the flour mixture. Mix until combined.
  4. Divide dough depending on how you want to cut (slices, shapes, etc) & freeze overnight. (You can also freeze until firm up to 3 months.)
  5. Preheat over to 325. Line baking sheets with baking mats or parchment.
  6. Let frozen dough stand about 5 minutes then roll out & cut dough or slice dough depending on preference. If the dough gets too soft...put it in the fridge for around 10 minutes to firm up.
  7. Bake until edges are golden- about 10 to 15 minutes but it may take longer depending on size. I always leave my cookies on the tray for around 5 minutes to firm up a bit as well before transfering to cooling rack.

If you don’t want to use homemade dough…I understand. The holidays are rough. Feel free to use store bought if you needto! Before freezing overnight- let’s color our cookies! Pick your colors (I use high pigment food coloring for more bold shades- you can purchase them here) & then separate your dough. I used yellow, red, blue, green…& I was out of purple so that explains that shade. I mean kind of. Needless to say Ijust re-purchased purple though because…yikes. I altered each shade a bit so it didn’t scream “CHRISTMAS” because not everyone at parties celebrates. That’s why these cookies work so well 😉

The next day your dough is all ready to go! To use cookie cutters you want to make a configuration kind of like this! Then spread it out with a rolling pin & cut.

My favorite way is the ball drop method- I just grab a small amount of each color then roll into a ball in my hands. As it cooks down you get brilliant cookies like this! I love this way because I can also make sure each cookie has each color. So pretty & colorful!
