Strawberry Cake Balls are an easy and quick dessert. For this easy recipe we used a fresh baked strawberry cake, once cooled we added freeze dried strawberry bits, and rolled them in powdered sugar. The kids made these with ease. They’re great for parties, or a sweet treat snack. (Also, we made a Valentine’s version)

Cake balls are so fun to make. My kids and I went through a cake pop phase exploring different flavors, and toppings. This kitchen activity really helped develop coordination skills for them. If you’ve ever make cake pops with the kids then you know what I’m talking about. These are similar to cake pops, but without the stick.

WHAT ARE CAKE BALLS?

Cake Balls are cake pops with out the stick. They’re made of crumbled cake mixed with frosting, so the crumbs stay together. Then they’re shaped into small round bite sized-balls. They can be dipped in a candy coating, usually chocolate or candy melts, and either rolled in powdered sugar, or sprinkles. They can be made in a variety of flavors like chocolate, lemon, vanilla, strawberry, pumpkin, and so many other options.

HOW LONG WILL CAKE BALLS LAST?

For optimal freshness they will last one week at room temperature, and up to 2 weeks in the refrigerator. The cake balls can last up to 3 months in the freezer, or 6 weeks if they’ve been candy coated. Always store them in an air tight container, or air tight freezer bags.

We love these easy cake balls, so we decided they would be perfect to make for Valentine’s Day. It’s the same recipe, with only 1 change. You will skip rolling them in the powdered sugar, and roll them in the cute little heart shaped sprinkles instead.

These are basically Valentine cake pops without the stick, and a few less steps. That’s why we love this simple recipe, and we did cheat and use a boxed cake to save some time. That was the point of this recipe. 🙂

Also, you can make these in a variety of cake ball flavors. I bet lemon is amazing, chocolate of course, and the kids would definitely go wild for confetti cake balls. The options are endless.

HOW ARE CAKE BALLS MADE?

Besides waiting for the cake to bake, and cool. It doesn’t take long to actually make them. Follow the recipe on the cake box, bake the cake, then let it cool. Once cooled, add the frosting, strawberry pieces, mix, and roll into balls. Only one step left, and that’s rolling them in the heart shaped sprinkles. Then you’re done, let the tasting begin!

Here’s what we used for both cake balls recipes:

    • strawberry cake mix (You will need other ingredients for this depending on the brand.)
    • vanilla frosting
    • freeze dried strawberries
    • powdered sugar
    • pink edible dust

Valentines’ Day version:

TIPS TO MAKE THE BEST STRAWBERRY CAKE BALLS

    • Don’t cook and brown the cake. It’s best to remove the cake when it’s slightly brown on edges and top.
    • Add the frosting in one tablespoon at a time, so it doesn’t end up sticky.
    • If cracks appear in the cake balls, then squeeze it and then roll it again until the cracks have disappeared. This way they won’t fall apart.

Ingredients

  • 1 box strawberry cake mix
  • 2 tablespoons vanilla frosting (about 2 tablespoons)
  • 1/2 cup freeze dried strawberries
  • 1 cup powdered sugar
  • 1-2 tablespoons edible pink pearl dust (by Wilton)

Valentine's Cake Balls

  • mini heart shaped sprinkles Follow recipe, but skip powdered sugar and pink dust. Roll cake balls in the sprinkles instead.

Instructions

  • Follow instruction on the cake box to make the cake. Let cake completely cool down after baking. You can set it in the refrigerator to cool it down for 10-15 minutes.

  • In a medium size bowl, add the powdered sugar and set aside.

  • Break apart the freeze dried strawberries, so they're in small pieces. They will crumble easily. Set aside.

  • Crumble the cake with your hands into a large bowl. Make sure not to leave any chunks. If some of the cake on the bottom and sides, are not soft then don't use this in the crumbs.

  • Add the freeze dried strawberries into the bowl with the cake crumbs.

  • Add 1 tablespoon of the frosting at a time to the crumbled cake. Using a fork, stir until well mixed. Take a spoonful in your hand and test the consistency by squeezing it in your hand. If it crumbles apart, add a little more frosting. You will want it to hold together without it being sticky.

  • Then add the next tablespoon, and repeat mixing. Do not add too much frosting, because the mix should stick together into a ball but not be wet and soft from too much frosting.

  • When you have just the right consistency, it time to roll into the balls. Get about 2 tablespoons of the mix in your hands, and form it into a ball. Then roll in a circle between your hands to get an even and round cake ball.

  • Once you have formed all the cake balls. Place about 5 at a time into the powdered sugar covering them until they'er all white. You can use a spoon for this, or simply move the bowl in circles so the cake ball roll around and are covered with the powdered sugar. Remove them from the powdered sugar, and set on a plate. Repeat this until you're done.

  • Sprinkle them with the pearl dust. You may wan to re-plate them if you're making these for a party.

    My kids made these, and they were so easy to make. The strawberry tastes really delicious. Of course they made the chocolate too. Also, kept them busy for awhile in the kitchen. Thanks again!
