These easy peanut clusters are the most addicting holiday candyever. They’re also theeasiest holiday candy ever.

They’re perfect for gifting and perfectfor snacking. 😉

Ingredients

This easy peanut clusters recipe is made up of 4 ingredients! It’s so simple and so good!

  • Vanilla Almond Bark and Semi-Sweet Chocolate Chips – the coating for the peanuts. I love the combination of ultra sweet, creamy vanilla bark with the slight bitterness from the semi-sweet chocolate.
  • Peanuts – use lightly salted and roasted peanuts for the best flavor and texture. A little salt helps to balance out the chocolate.
  • Maldon Sea Salt– for topping, if desired! Highly recommended for additional salt and crunch!

Pro tip

Feel free to play around with the bark and chocolate chip flavors. Try chocolate almond bark, dark chocolate chips, white chocolate chips, etc.

How to make

This delicious holiday candy takes 5 minutes to whip up!

  1. Melt almond bark and chocolate chips in the microwave until smooth.
  2. Stir in peanuts and mix again.
  3. Use a medium cookie scoop to portion the mixture out into 2 24-slot mini muffin tins greased with cooking spray or lined with wax paper.
  4. Drizzle with extra melted almond bark and top with sea salt, if desired then freeze until firm.

Pro tip

Don’t overheat your bark or chips — this will cause the chocolate to seize and become clumpy. Microwave in 30 second intervals, stirring in between until melted.

Do you need to use a muffin tin?

Not necessarily. I like to put a little twist on this classic recipe by making them in a mini muffin tin. I found it so much easier to use the muffin tin to shape them into cute little bites instead of just plopping them onto a baking sheet.

However, you don’t haveto. If you’d prefer to just scoop them out onto a lined or greased baking sheet, feel free to do that!

Can you use a different kind of chocolate?

If you want to. The semi-sweet chocolate offsets the rich creaminess of the vanilla almond bark perfectly.

However, if you prefer it even richer or sweeter use milk or dark chocolate instead. You could also use butterscotch chips or a combination of a couple of different ones to play around with flavors.

You really can’t go wrong!

Can you use a different nut?

Yes! Peanuts are the classic but you could also use pecans, walnuts, almonds, or even pistachios. Whatever you use, make sure they’re roasted and salted!

How to store

These peanut clusters will last in an airtight container at room temperature for 2 weeks, in the fridge for 1 month, or in the freezer for 3 months.

To enjoy again,just thaw in the fridge (if frozen) then devour straight from the fridge or at room temp.

Ingredients

US Customary - Metric

  • 1 (1 lb) block vanilla almond bark plus extra for drizzling on top if desired
  • 1 (12 oz) bag semi-sweet chocolate chips
  • 1 (16 oz) container lightly salted roasted peanuts
  • Maldon sea salt for topping if desired

Instructions

  • Spray 2 (24 slot) mini muffin tins with cooking spray OR line them with liners OR line a baking sheet with wax paper. Set aside.

  • Melt almond bark and chocolate chips together in the microwave until smooth. (Start with 60 seconds, stir, then continue at 30 second intervals until melted).

  • Stir in peanuts.

  • Use a medium cookie scoop to scoop mixture into prepared pan or onto prepared sheet.

  • Drizzle with extra almond bark and sea salt, if desired.

  • Place in freezer until firm.

  • Store in an airtight container at room temperature (my preference) or in the fridge (Trevor’s preference).
